well hello :)


WOW!! I really have been gone 4eva! I don’t think I’v even posted in April yet! 

so much has happened, rezolution conference, my sisters graduation, friends, and more friends, school(unfortunately) youth and friends from overseas that i haven’t seen for a VERY VERY long time- 1/2 my life to be exact. 😛 oh yes and my cousin came down for the rez conference!! 

well… here is a recipe 😀 this is vanilla cookies with a chocolate disk center-yum 🙂


Chocolate Chip Cookies

100g (4 oz) porridge oats
125g (5 oz) plain flour
2.5ml (½ teaspoon) bicarbonate of soda
2.5ml (½ teaspoon) baking powder
2.5ml (½ teaspoon) salt
100g (4 oz) butter at room temperature
100g (4 oz) soft dark brown sugar
100g (4oz) caster sugar
1 large egg
2.5ml (½ teaspoon) vanilla extract/essence
1 pack chocolate disks
115g chocolate chips(optional)

1. Preheat oven to 190°C/375°F/gas mark 5
2. Put the oats into a food processor or liquidizer and whizz to a fine powder
3. Add flour, bicarbonate of soda, baking powder and salt and whiz again to mix together
4. Put both sugars into a large bowl with the butter
5. Cream them until light and fluffy
6. Beat the egg and vanilla together in a cup
7. Beat this into the creamed butter mixture (use an electric whisk if you have one)
8. Add chocolate chips and dry ingredients, mix well with a spoon until everything is mixed in and you have a dough
9. Use your hands to roll into balls the size of ping-pong balls. Put one disk between two balls until totally covered and put them, 5cm apart, on to non stick baking paper on a baking tray. Press them down a very little bit.
10. Bake in the oven for about ten minutes. They should have a golden colour, but still look a little underdone (this is what makes the lovely chewy soft texture). If you like them crisp, keep them in a bit longer
11. Leave them on the tray for a couple of minutes to firm up. Enjoy 🙂
